Here’s another weeknight autopilot dish for the rest of us: people chronically short on time, but who still want something healthy and homemade. Serve with steamed broccoli and rice for a quick and healthy dinner. If you’re cooking for a crowd, make each person an individual papillote with 1 to 2 flounder fillets. I typically serve 2 fillets per person as a generous portion. Enjoy!
- 1/4 cup Trader Joe’s Bruschetta Spread (or thick jarred tomato spread of your choice)
- I substitute with a mixture of fresh basil, fresh diced tomatoes, olive oil, and salt and pepper in the summer.
- I recommend a fairly thick spread so there won’t be too much excess liquid in the packet.
- 2 flounder fillets (defrosted, if frozen)
- Parchment paper
- Baking sheet
Preheat oven to 400ºF. On a baking sheet, lay out one piece of parchment paper large enough to accommodate the fish.
Place the fish on the parchment paper, and spread the Bruschetta Spread over the fish. Lay another piece of parchment paper over the fish, folding it around the fish to form a packet, or papillote. Bake for 15-18 minutes. Each person gets their own little package to unwrap!
