Vegan Spinach and Artichoke Lavash Sandwiches


My beloved SF Giants are going to the NLCS, and I’m gearing up for a gameday feast with these scrumptious vegan spinach and artichoke lavash sandwiches. If you love spinach and artichoke dip, but not the damage it does to your waistline, you’ll love these healthy vegan sandwiches! They look very impressive and your guests will never know that they only took you exactly 2 minutes to put together. 😉

Yield: 8 sandwiches

Prep Time: 1 min


  • Hummus
  • Baby spinach
  • Half an avocado, sliced
  • Marinated quartered artichoke hearts, drained on paper towels
  • Spinach Wrap


  1. Spread a few tablespoons of hummus in an even layer over the wrap.
  2. Top with spinach leaves, pressing them into the hummus slightly, then top with the remaining ingredients on one end of the wrap.
  3. Roll wrap tightly, then slice into eight 3/4-inch rounds. To ensure flawless slices, clean your knife between each cut.
